Poached Pears

I enjoy a nice simple desert and poached pears can be just that. Todays recipe comes from my mom who is a master in the kitchen. (Thanks Mom)

This recipe is not baked in the oven but cooked on the stove top for a faster dessert. The amount of each of these ingredients are up to you, just adjust per your taste.

Poached Pears:

2 Pears any kind will be fine.

Raspberries fresh or even frozen will do

Cinnamon, Nutmeg per your taste

Agave syrup or Honey

Butter (not margarine)

Wash Pears slice in half removing center, add cinnamon, nutmeg, sweetener, butter. Put in a skillet with small amount of water, cover. Cook for about 15 minutes then add raspberries cover once more, cooking for about 10 more minutes.

Remove from pan sit back enjoy a simply wonderful dessert.

What’s in a Name

For the tail end of last week and part of this week I have been feeling grumpy and wanting to hold onto a grudge towards someone. They acted in a way that in the past led to such hurt that it brought back a lot of painful feelings. I then got mad at myself for even talking to them or being around them, I should have known but choose to throw caution to the wind and then wound up hurt and mad at them because of their actions then started to think bad about myself.

I held on to this exchange with someone who is just who they are. I expect that perhaps things with them could be different and when they are not I get mad at myself more than them because I should know better than to put my own expectations onto someone else, right?

That is the problem with expectations instead of just letting things be as they are.

I realize that I am only hurting myself holding on to a grudge but for these past few days I also had a who cares attitude that isn’t like myself, so this morning I had enough of my bad attitude. I prayed then on a piece of paper I wrote current at the top of one side and then release on the top of the other.  Below I wrote a current positive feeling then on the other underneath of release I attached a negative part of my past and its feelings. I then prayed on it, released it. I then went out side and burnt the paper.

I feel like a weight has been lifted!

But there’s more I came back in to do some of my Bible reading. It was on Genesis 19, the story of Sodom and Gomorrah destroyed. I thought I knew this story front and back. There’s even jokes about Lots wife being turned into salt but as I got done reading it I saw a correlation between my grudge of the past and releasing so I can have a great future. I must have had too much coffee with my devotions because I even went further to seeing more than just not looking at your past or you get nowhere.

I found that everyplace in the Bible a name means everything… Abram became Abraham Sarai had her name changed too I could go on. They believed in Gods promises they looked forward not back. I noticed that when someone in the Bile went forward God changed their name He stated who they are now and moving forward not who they were.

In Lots case Lot’s wife’s name is not mentioned but only her actions of what not to do.

Defining who we are keeps up looking ahead and able to let painful past go.

New Years Resolution

I am enjoying the first parts of this new year but then again I always look forward to a new one. I look at each new year as having such possibilities especially when I just finished a painful year. I am not one to stay up to ring it in, in fact I never have been one to be able to do that but I do enjoy waking up in the morning knowing its a fresh new year.

I have my quiet time and reflect on the past year then pray over what I need to let go so I do not bring it with me to the new year and that’s about it, no new years resolution for me. I know they say its good to do but for me each new day I have a resolution.

The definition of resolution is “to resolve to change an undesired trait or behavior, to accomplish a personal goal or otherwise improve their life.”

I choose to make a resolution daily for me it is not as overwhelming and because of that I will end up making life changes. If I choose daily to live a mindfulness life I will live simply and so much happier.  I saw a great pin on Pinterest that serves as a perfect reminder of this. I saved it, wrote it down and thought to share it incase you would like to as well.

I guess perhaps if you are one that loves the new year resolution then how about take each day as it comes to work on what you should work on so you will be a better person. To live a mindful way of life and see if you are happier this time next year.

No Bake Energy Ball

I have been using my time and energy these last few weeks to enjoy my grandson who is on winter break. I haven’t written because I took time to enjoy being with him but I found that in doing this I was feeling a bit run down.

Todays recipe is because of this feeling, I remembered seeing energy recipe balls on a Young Living website and thought I should try them. In no time at all I found these easy to make and gave me the boost that I needed.

Please enjoy and try one or all three of the recipes, winter can bring sluggish feelings to us all but I have found these helpful and tasty.

Tangerine Burst Chocolate Energy Balls
Prep Time: 10 minutes
Total Time: 15 minutes
Yield: 14

Ingredients
32 pitted dates
½ cup quick oats
¼ cup hemp seeds
2 tablespoons cocoa powder
¼ cup coconut flour
12 drops Tangerine Vitality™ essential oil
Instructions
Process dates in a food processor until they form a thick paste.
Mix in oats, hemp seeds, cocoa powder, coconut flour, and Tangerine Vitality essential oil. The mixture should form a firm dough.
Using a medium cookie dough scoop, roll dough into bite-sized balls.
Roll balls in cocoa.
Store in an airtight container.
Fruit’n’Oats Energy Balls
Prep Time: 10 minutes
Total Time: 15 minutes
Yield: 14

Ingredients
32 apricots
1 cup wolfberries
½ cup oat flour
2 drops Grapefruit Vitality™ essential oil
¼ cup quick oats
Instructions
Process apricots in a food processor until they form a thick paste.
Chop wolfberries, add to the apricot mixture, and process.
Mix in oat flour, Grapefruit Vitality essential oil, and oats. The mixture should form a firm dough.
Using a medium cookie dough scoop, roll into bite-sized balls.
Store in an airtight container.
Lemon-Basil Energy Balls
Prep Time: 10 minutes
Total Time: 1 minute
Yield: 14

Ingredients
32 pitted dates
½ cup dried strawberries
2 tablespoons chia seeds
½ cup quick oats
1 drop Basil Vitality™ essential oil
4 drops Lemon Vitality™ essential oil
Instructions
Process dates and strawberries in a food processor until they form a thick paste.
Mix in chia seeds, oats, and Vitality oils. The mixture should form a firm dough.
Using a medium cookie dough scoop, roll into bite-sized balls.
Store in an airtight container.
