Tofu Chocolate Chip Cookies: A Vegan Delight for Fall

Now that it’s September, the first days of autumn will be here before you know it. The cooler weather just adds to the fun of baking, plus it’s always so nice to have the sweet smells in the air as it warms up a house.

Today’s recipe is a hybrid cookie—it’s a combo of my daughter’s awesome chocolate chip cookies and mine. Perfect for vegans, the health-conscious, and foodies alike, these Tofu Chocolate Chip Cookies are a must-try!

Why Tofu?

Tofu in cookies? Absolutely! Tofu is an excellent ingredient for vegan baking and healthy desserts. It’s high in protein and low in calories, making it a nutritious addition to your cookies. Compounds in tofu may help protect against heart disease and diabetes and may also promote brain and bone health.

Ingredients

  • 1 Cup of Coconut Oil or Apple Sauce
  • 1 Cup of Sugar plus 2 Tablespoons of Molasses
  • 4 Tablespoons of Firm Tofu
  • 1 Teaspoon of Vanilla
  • 2 Cups of Flour
  • 1 Tablespoon of Cocoa Powder
  • 1/2 Teaspoon of Baking Soda
  • Pinch of Salt
  • 12 oz of Chocolate Chips

Instructions

  1. Preheat Oven:

Preheat your oven to 350°F (175°C).

  1. Blend Moist Ingredients:

In a large bowl, blend the coconut oil (or apple sauce), sugar, molasses, firm tofu, and vanilla until smooth.

  1. Add Dry Ingredients:

Gradually add the flour, cocoa powder, baking soda, and a pinch of salt to the wet mixture. Stir well until fully combined.

  1. Mix in Chocolate Chips:

Fold in the chocolate chips.

  1. Prepare Baking Sheets:

Spoon the cookie dough onto baking sheets.

  1. Bake:

Bake for 8-10 minutes. The edges should be golden brown, but the center should still be soft.

  1. Cool Down:

Remove from the oven and allow to cool for a few minutes on the cookie sheet. Then transfer to a cooling rack or paper sack.

By using coconut oil or apple sauce instead of butter, you help lower bad cholesterol and calories. Apple sauce brings some fiber and pectin to the table.
