If you’re thinking “Beets? Really?” trust me—I was in the same boat! That is, until I tried a friend’s roasted beet and pasta dish. 😍 One bite, and I was hooked! I thought, “Why not pair sweet, caramelized roasted beets with crunchy, spiced chickpeas?” The result? Pure pita perfection.
How to Make Roasted Chickpea and Beet Pita Pockets 🍅🌿
Here’s a step-by-step guide to assembling these pita pockets of joy. Don’t worry if it seems like there’s a bit of prep—I promise, it’s 100% worth it. Plus, you can roast everything ahead of time!
Step 1: Roast the Beets ❤️

- Fresh beets
- Coconut oil
