Chili Lime Tofu Taco’s with Mango Salsa-The Perfect Way to End Summer

With August being the last full month of summer, it’s hard to believe the “ber” months are almost here. Whether it feels like it or not, September is right around the corner.

That thought inspired this week’s recipe.

It’s light, colorful, packed with fresh ingredients, and one of those meals that somehow tastes even better after everything has had time to mingle together. In fact, I recommend making the tofu marinade and mango salsa at least six hours before serving. If you can prepare them the night before, even better! The flavors have time to become best friends, and you’ll be rewarded with an easy meal that comes together in minutes.

Start with the Tofu

Begin by tearing your block of extra-firm tofu into bite-sized pieces instead of cutting it with a knife. Tearing creates lots of little nooks and crannies that soak up the marinade and become wonderfully crispy when cooked.

Place the tofu on a clean kitchen towel, cover it with another towel, and set something heavy on top for about 15 minutes. This presses out excess moisture, allowing the tofu to absorb more flavor and crisp up beautifully.

Marinade

  • ¼–⅓ cup extra virgin olive oil
  • ¼ cup fresh lime juice
  • Zest from one lime
  • 1 teaspoon chili powder (or more if you like a little extra kick, all the seasoning is per your taste. the amounts I give is just a guide.)
  • ¼ teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • Salt and freshly ground black pepper to taste

Whisk everything together in a bowl or add it to a large zip-top bag. Toss in the torn tofu pieces, making sure they’re well coated. Refrigerate for at least six hours or overnight.

Fresh Mango Salsa

  • 1 large ripe mango, peeled and diced
  • 1 jalapeño, finely diced (remove the seeds for a milder salsa)
  • A generous handful of fresh cilantro, chopped
  • 1 small red onion diced
  • ¼–⅓ cup fresh lime juice
  • Salt and pepper to taste

Mix everything together, cover, and refrigerate until you’re ready to serve.

Time to Cook

When dinner rolls around, the hard work is already done.

Cook the tofu by grilling, air frying, or pan-frying until it’s golden brown and crispy on the edges.

Warm your favorite corn tortillas, then layer on the crispy tofu. Sprinkle with crumbled Mexican cheese such as cotija or queso fresco, then generously spoon the fresh mango salsa over the top.

That’s it!

You have a meal that is bright, refreshing, satisfying, and full of summer flavor.

Why These Ingredients Love You Back

One of my favorite things about this recipe is that it isn’t just delicious—it’s full of ingredients that nourish your body.

Tofu is a wonderful plant-based source of complete protein, providing all nine essential amino acids. It’s also rich in calcium, iron, and magnesium, making it a great choice for supporting muscle health and bone strength—especially important as we get older.

Extra virgin olive oil is one of the healthiest fats you can keep in your kitchen. Rich in heart-healthy monounsaturated fats and antioxidants, it may help reduce inflammation while supporting brain and cardiovascular health.

Limes bring much more than bright flavor. They’re an excellent source of vitamin C, which supports the immune system, helps your body produce collagen, and aids in iron absorption.

Mangoes provide vitamins A and C, antioxidants, and fiber. Their natural sweetness pairs beautifully with the savory tofu while helping support healthy digestion and immune function.

Jalapeños contain capsaicin, the compound responsible for their heat. Capsaicin has been studied for its anti-inflammatory properties and may even provide a gentle boost to metabolism.

Cilantro adds fresh flavor while providing vitamin K, antioxidants, and plant compounds that support overall wellness.

Together, these simple ingredients create a meal that’s colorful, nourishing, and satisfying without feeling heavy—a perfect way to enjoy these last warm summer evenings.
