Ingredients

  • Main Ingredients:
  • 1 Eggplant (peeled and sliced)
  • 1-2 Eggs
  • Cauliflower noodles (cooked according to box directions)
  • Coating and Seasoning:
  • Breadcrumbs
  • Olive oil
  • Italian seasoning
  • Onion powder
  • Garlic powder
  • Fresh parsley, oregano, basil
  • Salt and black pepper
  • Diced garlic
  • Sauce:
  • 12 oz can tomato sauce
  • 12 oz can crushed tomatoes in basil and garlic
  • Cheeses:
  • 1 cup mozzarella cheese (shredded)
  • 1-2 cups parmesan cheese (shredded)

Instructions

Step 1: Prepare the Eggplant
